Short answer: Ripe and aged Pu-erh usually brew well at 95–100°C (203–212°F). Young raw Pu-erh can also take hot water, but 90–95°C may soften sharp bitterness in delicate material. Water quality, leaf ratio, and steep time often matter as much as temperature.

Ripe Pu-erh likes heat

High temperature helps open compressed leaf and extract body from fermented tea. If the tea becomes muddy or overwhelming, shorten the infusion before dropping temperature. Fine grades release quickly and may need a faster pour.

Young raw tea offers more choices

Near-boiling water reveals full structure and is useful for evaluation. Slightly cooler water can emphasize fragrance and make casual drinking gentler. Neither method is universally correct; choose according to the question you are asking of the tea.

Good water beats a perfect number

Strong chlorine, perfume-like minerals, or stale kettle water can flatten tea. Use fresh, pleasant-tasting water and preheat the vessel. At high elevation, water boils below 100°C, so focus on a full boil rather than chasing an impossible reading.
